Prawn Ghee Roast Kerala Style Recipe – plump prawns tossed together with spices and curry leaves.
My natural tendency is to prefer seafood above all. I love most cuisines that have an array of seafood specialities. Ever so often, I try to incorporate more than just cooking Goan food into our routine dinners – especially making an effort to cook from other parts of India. Looking for different uses and proportions of similar spices, changing the influences and treatment of the food, excites me no end. On one of my trips back in 2008 when I travelled to Kerala, India on work, I tried these Prawns Ghee Roast in a street side hotel and since then I’ve been trying to recreate them.
I’m happy to report, I think this recipe is a winner! Easy to make, most of the ingredients are most likely to be in your pantry. And it cooks up in a jiffy! All the qualities of a star dish, really.
One tip I’d recommend that I follow diligently myself whenever I cook prawns (or fish) – don’t leave them unattended. Its only a matter of minutes when they are the perfect softness, cooked right, still retaining their sweetness and colour. Especially when marinated with lemon juice as that cooks them a bit. And they taste so good, they’ll be gone quickly off your plate. I’ve never had leftovers whenever I’ve made them.

Prawn Ghee Roast
- 500 gms Prawns
- 1 onion - large ( finely chopped)
- 2 green chillies (slit length-wise)
- 15 curry leaves (3 sprigs)
- 1.5 tsp chilli Powder
- 1 tsp turmeric Powder
- 1/2 tsp coriander Powder
- 2 tsp ginger garlic Paste
- 3 tsps lemon juice
- 1 tbsp ghee (Clarified Butter)
- 1 tsp sugar
- to taste salt
Marinate the cleaned prawns with salt, lemon juice, ginger-garlic paste, chilli, turmeric and coriander powder and let it rest for 20mins.
In a pan, heat oil. Add the curry leaves and let them splutter.
Then add the finely chopped onion and fry until softened slightly.
Throw in the prawns. When they are done half way, add sugar and adjust salt as per taste.
Since they were marinated with lemon juice, the prawns will cook quickly. When done, turn off the heat.
