Being a foodie comes with a few downsides – mind you, I’m not complaining and I wouldn’t have it any other way! But ever so often, when you eat that cookie or molten chocolate cake, you forget about the extra pounds you put on. Which leads to a few shopping nightmares. Nothing that a dash of dimsum wouldn’t cure. So you see how that’s a vicious cycle!
Since my taste buds drive all of my food choices, I’m not somebody who can jump on to the salad/raw food bandwagon. I take it upon myself to cook up dishes that would be healthy , yet flavorful and appealing. This Pan Seared Cream Dory with Sautéed Veggies is one such perfect dish. You can toss together bite-sized marinated fish fillets with as many veggies and combinations as you’d like. A liberal use of spices ensures it is packed with flavor. I usually serve this on its own or with a fresh lemony salad and a side of Nextflix

- 1/2 cup red bell pepper (finely sliced)
- 1/2 cup spinach baby
- 1/4 tsp turmeric powder
- 1/2 tsp chilli powder

Slice the cream dory fillets in bite sized portions. Marinate with salt, turmeric and chilli powder for about 15-20mins.
Heat the pan and then add little olive oil to pan sear the fillets.
Once almost done, take the fish off the pan and onto a kitchen towel so it can absorb the extra oil.
In the same pan, add remaining olive oil, fry the curry leaves with the garlic paste.
Add the onion and fry until lightly softened. Then add all the remaining vegetables and let them cook together.
When cooked sufficiently ( with still a bite to it), add the garam masala and salt.
Add the pan seared fillets of cream dory and toss gently. Turn off the heat and add the lemon juice. Garnish with fresh coriander leaves.
