  1. In a pan, heat oil. Add the the curry leaves, sliced green chilli (de-seed as needed) and cumin seeds and let them splutter.
  2. Now add the onions and fry until slightly soft. Include the tomatoes and fry a little. Add the turmeric powder, salt and sugar.
  3. Then add the warm water and let the tomatoes and onions cook together. Ensure they still have a bit of crunch to them, just long enough for the tomatoes to get pulpy.
  4. Serve with Pao (Goan bread) or even as a side dish.
